Ingredients:
- 2-1/4 lbs ripe-to-bursting heirloom tomatoes, coarsely chopped
- 1 green or red bell pepper, seeded and coarsely chopped
- 1/2 cucumber, peeled and coarsely chopped
- 1 clove garlic, minced
- 1/4 small sweet onion, coarsely chopped
- 1 oz sherry or red wine vinegar
- 3 oz rich olive oil
- 1-2 tsp salt to taste
- 1 large glass of cold water
Directions:
- Prep and Blend: In a blender, combine tomatoes, bell pepper, cucumber, garlic, onion, sherry or red wine vinegar. Blend at the highest speed for at least two minutes until silky smooth. You may need to do this in batches depending on the blender size.
- Food Mill Magic: Pour the mixture through a food mill to achieve that perfect, purist texture.
- Emulsify with Olive Oil: Return the milled mixture to the blender. Turn it on at low speed and slowly pour in the rich olive oil. This step creates the soup’s creamy character. Once all the oil is in, cover the blender and turn it up to high speed for another minute or two.
- Chill and Settle: Allow the gazpacho to chill in the fridge for a few hours. This enhances the flavors as the onion and vinegar settle.
